In this recipe, I’ve increased the amount of brown sugar. Brown sugar contains more molasses and, therefore, more moisture. The result? Soft, chewy chocolate chip cookies that are a delight to bite into, even when frozen solid.

While it’s not absolutely necessary, I personally love the uniform look you get from using perfect, cookie-cutter-shaped ice cream rounds. To achieve this, spread the softened ice cream evenly in a 13×9-inch pan and freeze it in a flat layer. After a few hours, you can use a cylindrical ice cream scoop or a circular cookie cutter to stamp out perfectly sized rounds that match your cookies.
