While I can’t take credit for inventing this delightful flavor combination, I was first introduced to the magic of figs, prosciutto, and burrata at Cusp, a restaurant in La Jolla, California, that holds a special place in my heart. Executive chef Donald Lockhart’s version of this salad was nothing short of spectacular. He also served an equally unforgettable dessert, featuring figs stuffed with blue cheese, sprinkled with sugar, and then lightly torched to create a sort of fig brûlée.
