These muffins eliminate the need for forks! Simply spoon the batter into a greased muffin pan or use your favorite muffin wrappers.
This recipe has been a favorite since 2012, and it’s been made countless times. Below, you’ll find the original, tried-and-tested recipe. Consider this the “plain” version of my blueberry coffee cake muffins, offering a delightful base for any additions you might enjoy!
Important Note: Despite the name, “coffee cake” doesn’t actually contain coffee. This type of muffin or cake is traditionally served alongside a cup of coffee, making it a perfect pairing.

- Softened Butter: Unsalted butter allows you to control the salt level. You’ll need slightly softened butter for the streusel and room-temperature butter for the batter. This difference is important for texture.
- Oil: Vegetable oil keeps the muffins incredibly moist, tender, and fluffy. Neutral-flavored olive oil or melted coconut oil can be used as substitutes if you prefer.
- Sugar: Brown sugar in the streusel adds a hint of molasses flavor, while granulated sugar works perfectly in the batter. However, using all brown or all white sugar will also work well. The important thing is to use what you have available.
- Cinnamon: This warming spice is essential for the classic coffee cake flavor.
- Eggs: Two eggs bind the ingredients together, providing structure and lift for the muffins.
- Sour Cream: The secret ingredient for extra-moist, bakery-quality coffee cake muffins. It adds a subtle tang and ensures the ultimate light and fluffy texture. Greek yogurt can be used as a substitute if needed.

Cinnamon Streusel Topping

The cinnamon-sugar crumbles, the streusel topping, is my absolute favorite part of these muffins! That’s why we don’t just add it to the top, but layer it within each muffin for maximum flavor in every single bite.
For the streusel, you’ll need flour, sugar, cinnamon, and slightly softened cubed butter. It’s crucial that the butter is only slightly softened, ensuring the streusel maintains its structure during baking. Cut the butter into the dry ingredients using a fork until it resembles coarse crumbs.
Pro Tip: Be careful not to overmix the streusel! Overmixing can result in a paste-like consistency. The ideal streusel should resemble wet sand.
How to Make Coffee Cake Muffins
- Prepare the streusel topping. Combine all streusel ingredients as directed above.
- Combine dry ingredients. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. This ensures even distribution of the leavening agents. Set aside.
- In a separate bowl, combine wet ingredients. Beat together the butter, oil, and sugar until well mixed and creamy. Add the eggs one at a time, beating well after each addition.
- Gradually add dry ingredients to wet ingredients. Reduce the mixer speed to low. Gradually beat in the flour mixture, alternating with the sour cream and vanilla extract, just until combined. Be careful not to overmix.


- Spoon into a jumbo muffin pan. Layer the batter and streusel in the prepared muffin pan. Spoon a portion of the batter, then sprinkle with streusel. Top with another portion of batter, followed by a final sprinkle of streusel.
- Bake. Bake the muffins in a preheated oven until a toothpick inserted into the center comes out clean. This usually takes between 18 and 22 minutes.
- Cool and devour! Remove the muffins from the oven. Let them cool slightly in the muffin pan before transferring them to a wire rack to cool completely.
