  • 1/2 (17.3-oz.) package frozen puff pastry (1 sheet), thawed
  • 4 pounds assorted heirloom tomatoes, thinly sliced and excess moisture patted dry (optional, but recommended for a crisper crust)
  • 2 onions, thinly sliced
  • 2 Tablespoons unsalted butter
  • 1 Tablespoon sugar
  • 4 cloves garlic, minced
  • 1 Tablespoon minced fresh thyme
  • 1 Tablespoon minced fresh rosemary
  • 8 oz. goat cheese, at room temperature
  • 8 oz. cream cheese, at room temperature
  • 2 large eggs
  • Balsamic syrup, for topping (optional)
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions 

  • Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.
  • In a medium saucepan, melt the unsalted butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until the butter is fully melted and the onions begin to soften.
  • Stir in the sugar and continue to cook the onions over medium-low heat, stirring occasionally, for about 20 minutes, or until they are deeply golden brown and beautifully caramelized. Add the minced garlic, fresh thyme, and fresh rosemary, then cook for another 5 minutes until the garlic is fragrant and lightly golden. Transfer this flavorful mixture to a separate bowl and allow it to cool completely to room temperature. This cooling step is important to prevent the cheese from melting prematurely.
  • While the onions cool, prepare the cheese filling.
