Calling all coconut cookie enthusiasts! Your wish is my command. You may remember my Homemade Samoas Girl Scout Cookies. The delightful cookies featuring a buttery shortbread base, a luscious caramel-coconut topping, and a decadent dark chocolate drizzle? Well, they’re back, but this time, they’re in easy-to-make bar form, all thanks to your amazing requests!
For the past few months, my inbox has been flooded with emails, Facebook messages, Tweets, and Instagram pleas for a simplified version of the iconic cookie recipe. Let’s be honest: While the homemade Samoas cookies are incredibly close in taste and texture to the original Girl Scout treat, I wouldn’t exactly classify them as a “quick and easy” dessert. They require time and effort.
Therefore, I dedicated the last few weeks to transforming the original recipe into a streamlined cookie bar recipe. This eliminates the need to refrigerate and roll out the dough, and cut it into individual shapes. I’ve developed a simple shortbread base perfectly sized for a 13-by-9-inch baking pan, tweaked the coconut-to-caramel ratio for maximum flavor, and increased the amount of rich dark chocolate. For an extra touch of decadence, I dip the bottom of each cookie bar in chocolate. However, if you’re short on time, you can easily skip this step without sacrificing too much of that authentic Samoas flavor.
